“Hard-Shell” Bean and Chicken Tacos

Every family should have their own favorite recipe for taco night and this recipe right here is our favorite. Our tried-and-true taco recipe. It is cheap and simple yet full of flavor and makes quite a few meals for the rest of the week.

But just between you and me, my secret reason why I like this recipe so much is that I don’t use store-bought hard-shells for the tacos. I make them myself with regular corn tortillas (pictures demonstrated below). This method is tops for me, because the shell is softer than the breakable hard-shells yet crispier than the flour tortillas.

Here’s what you’ll need:

1 bag of dried black beans, cooked and rinsed
1 jar of salsa (I used Frog Ranch brand, but you can use any kind you like)
2 cups of shredded chicken
1 tbsp. chili powder
Salt and Pepper
Corn tortillas
Shredded cheese
Sour Cream

1. In a large skillet, combine chicken and beans to cook over medium-high heat. Add seasonings, cilantro and salsa. Stir to blend.

2. In another skillet, over medium heat, drizzle a little bit of oil. Place two corn tortillas in, let them brown for about a minute and then flip.

3. On one half of each tortilla, add a scoop of the bean mixture. Add a little bit of cheese on top and flip the other side of the tortilla over and gently press down.

4. Once cheese is melted, remove from pan. Serve with sour cream.
