Mmm, IHOP pancakes…melt-in-your-mouth, send-you-to-heaven, ever-so-fluffy pancakes. Is it transparent how much I love IHOP pancakes?
I will go to IHOP simply for their pancakes. But one day the realization hit me…could I possibly make these at home, and at the fraction of the cost?
Why yes, yes I could. And I DID! Thanks to the world wide web, I found that there were others out there who were determined to make their own IHOP pancakes. And someone nailed the recipe and bless their heart, they made it easier for all the rest of us. Although I do not remember which website I got this from, I have been making these for awhile and have been tweaking them to our own favorite pancakes.
But listed below is the basic recipe to the IHOP fluffy pancakes. You will never go back to boxed pancake mix again!
Homemade IHOP Pancakes
Here’s what you’ll need:
1 1/4 cup all-purpose flour
1/4 cup sugar
2 tbsp. melted butter
1 tsp. baking soda
1 tsp. baking powder
A pinch of salt
1 egg, beaten
1 tbsp. vanilla extract
1 1/4 cup butter milk (or just regular milk, with 1 tbsp and 1 tsp. cider vinegar mixed in, but make sure you let it sit for 5 minutes first)
Here’s what to do:
1. In a large bowl, mix the flour, baking soda, baking powder, and salt together with a whisk to mix all together.
2. Add the egg, butter, and milk. Stir gently to combine. (Try to avoid over-stirring, it will make the pancakes less fluffy)
3. Add the sugar and extract. Stir to combine and let it sit while warming up the griddle or skillet over medium heat.
4. Cook pancakes as you normally would. You will notice how fluffy these pancakes will fluff up to! It’s pretty cool to watch. Enjoy!
